Method
For cookie base, in bowl combine flour, butter and brown sugar. Cut butter into dry ingredients until small crumbs form. Press into bottom of lightly greased 13 x 9 x 2-inch baking pan. Bake in 350 degree F oven for 15 minutes.
Meanwhile for topping, combine eggs, brown sugar, flour, baking powder, vanilla and salt. Beat until well blended. Stir in 1 cup coconut. Spread topping evenly over baked crust. Sprinkle diced pears evenly over topping; lightly press pears into topping. If desired, sprinkle with additional coconut. Bake in 350 degree F oven for about 20 minutes or until topping is puffed up around pear pieces and top is lightly browned. Cool on rack.
