Method
For each serving: Heat 1-1/2 tsp oil in skillet over medium heat; add 1/2 clove garlic. Sauté stirring 2 minutes. Stir in 1/2 cup wine and 1/2 tsp each thyme and zest; cover and simmer 3 minutes.
Gently lay in one cod fillet; cover and simmer about 5 minutes until opaque throughout and flakes easily. Remove cod from poaching liquid; plate and keep warm. Raise heat to high; reduce poaching liquid to 2 Tbsps.
Pour over cod to serve.
