Paskha

Paskha
This Russian dish combines cottage and cream cheeses, butter, sugar, eggs, raisins, almonds and fruits. Paskha can stand on its own as a dinner dessert, but is traditionally served as a side dish at Easter.

Ingredients
2 lbs cottage cheese
2 eggs, hard-boiled
1/2 cup butter, softened
3 oz cream cheese 
1/4 cup confectioners sugar
1/2 cup raisins
1/2 cup almonds, ground
1/2 cup candied fruits, orange peel, lemon peel, cherries

Method
Sieve cottage cheese and hard-boiled eggs together. Beat in butter and cream cheese, then beat in sugar. Add raisins, ground almonds and candied fruits.
 
Press mixture into a new 6-inch flowerpot (or use any container that provides drainage) lined with cheesecloth. Place in a bowl and allow to drain overnight in the refrigerator. Unmold to serve. If desired, garnish with additional candied fruits.
