Pasta with Tomato, Ricotta & Herbs

Pasta with Tomato, Ricotta & Herbs
A traditional Italian pasta dish with garlic, fresh herbs, sugar and tomatoes covering fresh pasta. Finished off with a dollop of ricotta cheese.

Ingredients
8 cups chopped onions
2 Tbsp minced garlic
6 Tbsp olive oil
9 qts California tomatoes, peeled, seeded and diced
6 Tbsp chopped fresh marjoram
4 tsp chopped fresh rosemary
1 Tbsp sugar
1 Tbsp salt
2 tsp black pepper
3 lbs cooked fettuccine
1-1/2 cups ricotta cheese

Method
Sauté onions and garlic in oil in a large skillet over medium high heat until softened. Stir in remaining ingredients except ricotta and fettuccine. Cook over medium high heat stirring frequently for 10-15 minutes, or until sauce thickens.
 
Top each serving with 1 oz (1 Tbsp) ricotta cheese.
