Peanut Pastry Leaves

Ingredients
1 lb plus 1-1/4 oz frozen puff pastry sheet, thawed
1/3 cup chopped roasted peanuts
1/3 cup sugar
Confectioners sugar, as needed

Method
Roll out each pastry sheet into a 14 x 10 inch rectangle. Combine peanuts and sugar. Sprinkle peanut mixture on each sheet.
 
For each sheet, fold short ends to meet at center. Fold ends to meet at the center once more. Fold one half over the other to form a roll, 10-inches long and about 2-inches wide. With a very sharp knife, cut each roll into 20 pieces. Lay flat on ungreased baking sheets and bake in a 375 degrees F oven for 15 minutes or until golden brown. Remove from oven and sprinkle with confectioners sugar.
