Pepper Seared Alaska Salmon
Feature this Northwestern delicacy on fresh fish menus. Serve as shown with a dollop of Horseradish Sauce, kiwi and lemon slices, steamed asparagus, and yellow zucchini squash.

Method
Season one salmon fillet with salt. Sprinkle 3/4 tsp cracked pepper evenly over both sides of steak, pressing it lightly into fish. Sear salmon in a lightly oiled heavy skillet over high heat for 1 to 2 minutes on each side, or until golden brown. Reduce heat and cook just until salmon is cooked through. Remove from heat and place on serving plate with 2 Tbsp Horseradish Sauce.
