Pineapple Cart Fruit Tray
Just in time for Easter brunch is our fresh medley of fruit. Visually stunning, this edible display can be arranged in countless ways according to various needs.

Ingredients
1 large ripe pineapple with stem on
Pineapple wedges
Cantaloupe balls
Honeydew balls
Fresh strawberries
Fresh blueberries
Fresh cherries

Method
Use a large ripe pineapple with the green stem attached. Lay the pineapple down and cut off 2 circular pieces from the bottom, less than 1/2" thick. Set aside as these are the " wheels " of the cart.
 
Now hollow out a rectangular section from the top part facing up with a sharp knife. Be very careful to not cut through the sides or bottom of the pineapple. This section will hold more fruit. Lay the pineapple in center of a tray.
 
Using toothpicks, attach the reserved pineapple slices to sides of the pineapple .The whole thing should look like a cart! The stem is the handle. Surround pineapple on tray with various fresh fruits suggested above.
 
Fill the hollow of the pineapple with fruit also. Remember to use the pineapple that was hollowed out of the pineapple also. You could decorate your filled pineapple with toothpick frills or tiny paper umbrellas etc., whatever is appropriate, creative, and fun.
