Try serving Pink Applesauce with Potato Latkes. This combination is a traditional Hanukkah favorite.Remove stem and blossom ends from apples.
Cut into wedges, peels and pits included, and drop into cooking pan. Add about 1" water. Cover and cook until apples are soft, about 10 minutes.
Force through a food mill or strainer to eliminate skin and seeds. Season with lemon juice and sugar, adjusting to taste. Stir. Serve warm or chilled.
NOTE: Don't worry about adding too little water to the apples in the pan. Worry about too much; it dilutes the sauce. You need only enough water to keep the apples from burning. Taste the sauce before adding the sugar. In applesauce, it serves as a seasoner rather than as a sweetener.
