Method
Cut cod into serving-size pieces. Combine water, lemon juice, onion and seasonings. Bring to boil; simmer 20 minutes. Add cod. If necessary, add boiling water to cover cod.
Simmer, covered, 5 to 10 minutes or until cod flakes easily when tested with a fork. Remove cod to platter. Pour Lemon Butter Sauce over cod; garnish with parsley.
Lemon Butter Sauce: Melt 1/4 cup butter; add 2 Tbsp lemon juice. Serve warm. Makes about 1/3 cup.
Yields: 4 to 6 servings. Recipe may be halved.
