Method
To make relish: In large saucepot in hot oil, cook green pepper, onions and jalapeno peppers until tender. Add soup, corn and lemon juice. Cook 10 minutes. Remove from heat. Add tomatoes and cilantro.
On 1/2 of each tortilla, layer 2 oz pork, 1/2 cup corn relish and 1 oz cheese. Fold in half.
Broil until internal temperature is 155 degrees or higher for 15 seconds and cheese is melted.
Hold at 140 degrees of higher. Portion 1 tortilla per serving.
Yields: 50 servings (1 quesadilla each).
