Method
Finely grate potatoes into a large bowl. Grate onion into bowl. Drain off excess liquid.
Beat in eggs, then stir in flour, salt and pepper. Heat about 1/2" oil in a large skillet. Drop potato mixture by tablespoons into hot oil.
Brown just until edges are crisp; turn and brown other sides. Remove with a slotted spoon and serve hot.
Latkes are traditionally served with applesauce.
