Method
Sauté onions and garlic in butter until tender, about 2-3 minutes. Add cheese and cook, covered over medium-low heat until cheese is melted, stirring frequently. Stir in milk if mixture is too thick. Spoon cheese into bowl, sprinkle with chorizo, tomato and cilantro. Spoon 2 Tbsp mixture on each tortilla and roll up for wraps.
Browned beef, seasoned to taste with taco seasoning, can be substituted for chorizo.
