Quick and Easy Brown Bread

Quick and Easy Brown Bread
This bread is similar to Boston brown bread in flavor. It can be mixed up in a jiffy and requires no kneading or rising. For a real treat, serve it with orange marmalade.

Serves: 20 Slices

Ingredients

1-1/2 cups nonfat milk
2 Tbsp cider or distilled vinegar
2 cups whole-wheat flour
1 cup all-purpose flour
2 tsp baking soda
1/2 tsp salt
1/2 cup molasses
1/2 cup raisins

Method

Preheat oven to 325 degrees F. Mix the milk and vinegar; set aside. In a large bowl, mix the whole-wheat flour, all-purpose flour, soda and salt. Add the milk mixture, molasses and raisins. Stir just enough to mix. The batter will be fairly stiff and sticky. Spoon into a 5 x 9-inch oil-sprayed loaf pan and bake for 1 hour. Remove from the pan and place on a rack to cool.
