Reuben with Caraway Sauerkraut

Reuben with Caraway Sauerkraut
Thinly sliced corned beef layered with caraway seeds, sauerkraut and Swiss cheese, grilled quesadilla-style and served with Thousand Island Dressing.

Ingredients
9 lbs thinly sliced prepared corned beef
48 (10") flour tortillas
6 lbs shredded Swiss cheese
3 lbs drained sauerkraut
1/4 cups caraway seeds
Thousand island dressing

Method
For each serving, to order: On hot griddle, heat 6 oz corned beef. On the same griddle, heat 2 tortillas. Cover 1 tortilla with 2 oz cheese. Layer with corned beef, 2 oz sauerkraut and two additional oz cheese.
 
Sprinkle with 1/2 tsp caraway seeds. Top with second tortilla. Griddle about 5 minutes on each side until tortillas are lightly browned and cheese is melted.
 
Cut into wedges, plate and serve. Accompany with 1/4-cup ramekin.
