Method
For each serving, to order: On hot griddle, heat 6 oz corned beef. On the same griddle, heat 2 tortillas. Cover 1 tortilla with 2 oz cheese. Layer with corned beef, 2 oz sauerkraut and two additional oz cheese.
Sprinkle with 1/2 tsp caraway seeds. Top with second tortilla. Griddle about 5 minutes on each side until tortillas are lightly browned and cheese is melted.
Cut into wedges, plate and serve. Accompany with 1/4-cup ramekin.
