Method
Cook bacon until crisp in medium saucepan; remove bacon. Drain, reserving 1 teaspoon drippings.
Sauté onion and garlic in drippings until soft. Stir in rice, oregano, paprika and pepper; add broth. Bring to boil; reduce heat. Cover and simmer 20 minutes, or until liquid is absorbed.
Gently stir in cooked vegetables and bacon. Cover and cook 3 minutes or until heated through.
