Rigatoni Pasta with Vegetable and Meat Sauce

Method
Prepare rigatoni according to package directions. Drain and chill in ice bath. Set aside. In large skillet, saute onion, sausage, eggplant and olives in olive oil 5 minutes or until brown. Discard excess fat. Add sauce and simmer 10 minutes. Stir in pasta, cook 5 minutes over high heat. Top with Parmesan cheese and fresh cracked pepper. Serve hot.
