Method
Place pork fat or seasoned butter in body of pheasant : this improves flavor and keeps bird moist. Brush entire bird with melted butter and cover with bacon strips. Place on breast. Roast.
In the oven bake at 340 degrees F for 30-40 minutes. Conventional Oven preheat shelf 1: 400 degrees - 40-50 minutes Second Oven preheat shelf 1: 375 degrees - 40-50 minutes. Gas Oven Mark 6 shelf 4: 15 minutes per 450g (1 lb) + 30 minutes extra.
A large pheasant may require up to 1-1/4 hours.
Yields: 4-6 servings.
*Salt and pepper mixed into a generous piece of butter.
