Roast Prime Rib
An attractive dish for any brunch or buffet carving station, this mouth-watering dish is sure to be a hit with all customers.
Serves:
9-12

Ingredients
6 lbs prime rib, 2" tail
1/2 lb sliced bacon
Parchment paper and string to tie
Method
Sprinkle roast generously with Seasoning Mix and rub into surface of prime rib. Choose from
Pepper Herb Rub
or
Traditional Seasoning Mix
.
Place bacon slices over the top of the seasoned roast and tie with string to secure bacon. Drugstore wrap roast in parchment paper. Keep seasoned and prepared roast refrigerated for two hours or overnight.
Place in 12" deep Dutch oven lightly greased to keep parchment from sticking to pot.
Cover with lid and roast at 325-350 degrees F for 3 hours or until meat thermometer reads 160 degrees F for medium done.
