Roasted Garlic Tapenade

Roasted Garlic Tapenade

Serves: 24

Ingredients
5 cups California Ripe Olives
2 tsp anchovy paste
6 Tbsp capers, drained
4 tsp roasted garlic, puréed
1/4 tsp cayenne pepper
2 Tbsp Marjoram, chopped
2/3 cup olive oil

Method
In a food processor, reduce olives, anchovy paste, capers, garlic, cayenne, and marjoram to coarse purée.  Add the olive oil and process only until the mixture is homogenous.
 
Serving Suggestion: Serve as a sauce on sliced leg of lamb.
