Roasted Tomato Coulis

Ingredients
3 lbs fresh plum tomatoes
3 Tbsp olive oil
3 Tbsp tomato paste
2 Tbsp minced basil leaves
2 tsp minced garlic
Salt and pepper, to taste

Method
Place tomatoes in shallow pan; toss with oil. Roast at 500 degrees F 20 to 25 minutes or until skin is blackened, stirring once.
 
Cool slightly, slip off skins. Remove stems and seeds; chop fine. Stir in tomato paste and seasonings.
