Santorini Alaska Salmon Orzo Salad

Ingredients

Dressing
2 cups olive oil
2 cups balsamic vinegar
1 cup fresh oregano, chopped
1 cup fresh rosemary, chopped

Salad
1-1/2 gals cooked orzo
2 cans (64 oz ea) Alaska Canned Salmon, thoroughly drained
1-1/2 qts green or yellow peppers, coarsely chopped
1 qt small cherry tomatoes
3 cups California Ripe Olives, quartered
3 cups sliced green onions
4 cups Myzithra or Feta cheese, crumbled
24 lettuce leaves

Method

Prepare dressing: combine olive oil, balsamic vinegar, oregano and rosemary.

For each serving: portion 1-1/2 cups salad on lettuce-lined plate.

In large bowl, blend orzo, salmon, bell peppers, tomatoes, olives and green onion.

Pour over dressing and sprinkle on cheese; stir to combine.
