Sauteed Alaska Cod with Sun-Dried Tomato Pesto

Ingredients

9 lbs Alaska Cod fillets
Flour, for dredging, as needed
Salt and pepper, as needed
1-1/2 cups olive oil
Sun-dried tomato pesto

Method
For each serving: Dredge one fillet in flour to coat evenly; season with salt and pepper. Heat 1 Tbsp oil in sauté pan over medium-high heat; add fillet and cook until opaque throughout and flakes easily, turning once.
 
Plate and top with 2 Tbsp Sun-Dried Tomato Pesto.
 
Yield: 24 servings.
