Method
Preheat oven to 500 degrees F. On sheet pans dusted with corn meal, lay out two slightly stretched pizza rounds. Brush each with 1/8 cup olive oil. Place in oven and bake 8-10 minutes until golden brown. Remove from oven and keep warm.
In a bowl, mix the sour cream with the chives. Cover and refrigerate until needed.
Prior to serving, take one pizza crust, spread 1/3 cup of sour cream cover the crust. Top with 3/4 lb of smoked salmon arranging it to cover uniformly. Cut pizza in 8 pieces.
Serving Style
FOR TRAY PASS:
Place on serving tray keeping the form. Put 1 Tbsp of golden caviar in center of pizza, sprinkle 1 Tbsp of red onion around the pizza and sprinkle 1 tsp of black caviar around the pizza.
