Smokey Potato Chicken Melt
A sumptuous recipe that's appetizing as a side dish yet hearty enough to be a meal. Potato cubes, diced chicken, cream cheese, smoked cheddar and more deliver satisfaction with every bite.

Ingredients
4 lbs Private Reserve Breakfast Cubes
2 lbs, 4 oz diced/cooked chicken breast
3 qts hot white sauce
1 lb, 8 oz cubed cream cheese
2 lbs shredded smoked cheddar cheese
Sliced green onions, for garnish

Method
Combine Breakfast Cubes and chicken in a full steam table pan (20" x 12" x 2").
 
Combine white sauce and cream cheese. Stir until smooth. Add half of the cheddar cheese; stir until melted. Pour over chicken. Sprinkle remaining cheese over mixture.
 
Heat at 300 degrees F (convection oven) for 30 minutes or 325 degrees F (conventional oven) for 35 minutes, or until heated through and cheese is melted.
 
Serve topped with green onions.
 
Yields: 20 servings.
