Southern Peanut Pie

Southern Peanut Pie

Serves: 6

Ingredients
3 eggs
1/2 cup granulated sugar
1-1/2 cup dark corn syrup
1/4 cup melted butter
1/4 tsp salt
1/2 tsp vanilla
1-1/2 cups chopped roasted peanuts
9" unbaked deep dish pastry shell

Method
Beat eggs until foamy. Add sugar, syrup, butter, salt, and vanilla; continue to beat until thoroughly blended. Stir in peanuts. Pour into unbaked pastry shell.
 
Bake in a 375 degree F oven for 50 to 55 minutes. Serve warm or cold.
 
May be garnished with whipped cream or ice cream.
