Southwestern Salsa

Ingredients
8 lbs Pacer Salsa Base
1 gal water
4 (10 oz) cans tomatoes, crushed
1 (10 oz) can jalapenos, sliced & undrained
8 oz cilantro, fresh
4 lbs white onions, fresh, whole & peeled

Method
Place all ingredients in a buffalo chopper and blend together until salsa is a slurry type consistency. May season to taste. Hold in walk-in cooler. Check daily for freshness.
 
Yields: 6 gallons.
