Method
Trim any fat from wings and discard. Split wings at each joint and save wing tips for turkey broth. Cover hotel pans with heavy duty foil. Arrange wing sections, in a single layer.
Over low heat, combine soy sauce, wine, sugar, pepper flakes and ginger in a saucepan. Blend mixture until sugar is dissolved. Pour sauce over turkey wings, coating each piece.
Bake in a preheated 375 degree F oven for about 1-1/2 hours, turning wings after the first 45 minutes. Continue to bake, uncovered, until sauce has thickened.
