Sweet Potato Pie

Sweet Potato Pie
Rich, creamy, sweet and delicious. Serve a variation on a traditional favorite.

Ingredients
1/4 cup butter
2 eggs beaten
1/2 tsp cinnamon
2 Tbsp cornstarch
5 oz evaporated milk
1/4 tsp salt
(1) 9" unbaked pie shell
3/4 cup sugar
15 oz Signature Whole Yams - drained and mashed
1 tsp vanilla

Method
Preheat oven to 400 degrees F.
 
Cream butter and sugar together. Add eggs and stir. Add yams and mix well. Add cinnamon and cornstarch. Stir in milk, vanilla and salt, making sure all ingredients are thoroughly mixed.
 
Pour into pie shell and bake 15 minutes. Lower heat to 350 degrees. Cook until knife comes out clean (20-30 minutes).
