Sweet Potato Souffle

Sweet Potato Souffle

Ingredients
3 cups sweet potatoes, cooked and mashed
1/3 cup dry sherry
1-1/2 cup half and half
6 Tbsp butter, melted
3 tsp orange zest
1 tsp salt
1/4 tsp white pepper
1/4 tsp nutmeg
1/4 tsp cinnamon
2 Tbsp brown sugar
6 eggs, separated

Method

Preheat oven to 375 degrees F.

Butter a 2 quart souffle dish or 6 individual souffle dishes. Prepare a Bain Marie by placing the buttered cup(s) in a baking dish, then filling the dish 3/4 the way up the sides of the cups, with warm water. Baking the souffles this way helps them to rise and cook evenly.

In a large mixing bowl, combine all ingredients except eggs and beat until smooth. Beat in egg yolks. Set aside.

In a separate large bowl, beat egg whites until stiff, but still moist. Gently fold egg whites into the sweet potato mixture and pour into souffle dish(es). Bake for about 45 minutes or until light golden brown on top. Serve immediately.
