Szechuan Noodles

Szechuan Noodles

Ingredients
16 oz dry vermicelli
1 Tbsp dark toasted sesame oil
3 Tbsp vegetable or peanut oil
6 cups shiitake mushrooms, stems removed, sliced
3 cloves garlic, minced
3 cups Chinese pea pods
1 cup red bell peppers, julienned
2/3 cup bottled teriyaki sauce
1/2 cup Nakano seasoned rice vinegar, red pepper or original
1/2 cup roasted, salted peanuts
1/2 cup cilantro or green onions, chopped

Method
Cook pasta as package directs; drain. Rinse well; drain. Toss with sesame oil. Heat vegetable oil in large saute pan. Add shiitakes and garlic; stir-fry 2 to 3 minutes. Add pea pods and bell peppers; stir-fry 1 to 2 minutes. Stir in teriyaki sauce and rice vinegar; simmer 1 minute. Pour over pasta; toss with peanuts and cilantro.

Per Serving: Serve immediately as a hot side dish or cover and chill to use as a salad. To serve, place approximately 1 cup on serving plate.
