Tabbouleh

Tabbouleh
A Middle Eastern salad made with crushed wheat, tomatoes, mint, olive oil, and parsley, served finely ground on lettuce leaves for scooping it up.

Serves: 4

Ingredients
1/2 cup bulgur (crushed wheat)
1-1/2 medium chopped & drained cucumbers
2 medium chopped tomatoes
2 bunches finely chopped parsley
1/2 bell pepper
1 finely chopped fresh hot pepper (optional)
1/4 Tbsp salt
1 minced green onion
3/4 cup olive oil
1/2 cup lemon juice
1/2 cup chopped fresh mint

Method
Place the bulgur (crushed wheat) in bowl; cover completely with cold water and soak over night.
 
Drain bulgur in sieve. Wrap in cheesecloth or towel; squeeze to remove all all water. Return bulgur to bowl.
 
Add cucumber, tomatoes, bell pepper, hot pepper, salt and green onion.
 
Just before serving, add olive oil, lemon juice and mint. Toss well.
