Tex-Mex Fajita Salad

Tex-Mex Fajita Salad

Ingredients
1-1/2 qts ripe olive slices
1-1/2 qts drained kidney beans
1-1/2 qts corn kernels
3 cups diced red bell pepper
1/2 cup chopped cilantro
1-1/2 cups ranchero salad dressing
3 lbs torn salad greens
3 lbs grilled & thinly sliced beef flank or skirt steak
1-1/2 cups sour cream
Tortilla chips, as needed

Method
Combine first 6 ingredients in large bowl. Mix well. Cover and chill completely.
 
Combine salad greens and 1-1/2 cup Ranchero Salad dressing in large bowl. Mix well.
 
Portion 2 oz greens on each plate and place 4 oz olive mixture in center of greens. Arrange beef slices around olive mixture.
 
Top with a dollop (1 Tbsp) sour cream and arrange tortilla chips as desired.
