Method
Preheat oven to 375 degrees F.
Line 2 cup soufflé or baking dishes with prepared pastry. Reserve pastry for tops.
Combine cheese, apple, and nuts; divide equally over crusts in dishes, about 2/3 cup per dish.
Prepare filling: Whisk eggs, cream, salt, pepper, and nutmeg. Pour egg/cream mixture evenly over cheeses, about 3/4 cup per dish, filling to 1/2 inch below rim of dish.
Top dishes with reserved pastry; trim and crimp edges.
Bake 25-30 minutes, until puffed and golden and thoroughly cooked. Serve immediately.
