Method
Combine mustard and pesto and spread 1 Tbsp between two slices of toast.
On the bottom slice, alternate layers of tomato, mozzarella, 1/2 Tbsp of mustard-pesto and fresh basil leaves.
Top with the second slice of toast and cut on a bias.
Variation: Change tomato to roasted red pepper.
