Tomato Pesto Soup

Tomato Pesto Soup

Ingredients
(4) 50 oz cans condensed tomato soup
1 gal 2% milk
28 lbs prepared pesto sauce
2 lbs canned, diced tomatoes
1-1/2 tsp minced garlic
3/4 tsp black pepper
3/4 tsp ground red pepper
1-1/2 cups finely chopped fresh basil leaves
Basil leaves for garnish

Method
In large saucepot mix soup and milk. Add pesto, tomatoes, garlic, black peppers, red pepper and basil. Heat to 140 degrees F or higher for 15 seconds and until slightly thickened, stirring often.
 
Hold at 140 degrees F or higher. Portion using 8 oz (1 cup). Garnish with basil leaves.
 
Yields: (50) 8 oz servings.
