Method
Toss vegetables with 1/2 of the olive oil, salt and pepper. Spread on a sheet pan and bake at 500 degrees F for approximately 10-15 minutes or until light brown. Toss from time to time.
Toss grilled vegetables with garlic, vinegar, fresh herbs and remaining olive oil.
Toss grilled herbed vegetables with tortellini and refrigerate for 3-4 hours.
Yields: 3-1/2 lbs.
