Tri-Color Cheese Tortellini with Grilled Herbed Vegetables

Ingredients
1 cup olive oil
3 red bell pepper, 2" strips
1 lb green beans, 2" length
6 carrots, 1/4"x 1" slices
2 cups sliced onion
1 cup mushroom
2 tsp salt
2 tsp black pepper
2 tsp finely minced garlic
1/2 cup balsamic vinegar
1/4 cup chopped fresh basil
2 Tbsp chopped fresh tarragon
1/2 cup chopped fresh parsley
2 lbs tri-color thawed cheese tortellini

Method
Toss vegetables with 1/2 of the olive oil, salt and pepper. Spread on a sheet pan and bake at 500 degrees F for approximately 10-15 minutes or until light brown. Toss from time to time.
 
Toss grilled vegetables with garlic, vinegar, fresh herbs and remaining olive oil.
 
Toss grilled herbed vegetables with tortellini and refrigerate for 3-4 hours.
 
Yields: 3-1/2 lbs.
