Method
Combine rice, turkey, tomato, onions, green pepper, basil, salt, red pepper, milk and eggs in a 13" x 9" pan coated with cooking spray. Top with cheeses. Bake at 375 degrees F for 20 minutes.
To serve, cut into 8 squares, cut each square diagonally into 2 triangles. Garnish with sour cream and chopped red and green bell pepper, if desired.
Yields: 8 servings.
