Turkish Kabobs with Yogurt Dressing

Ingredients

6 cups yogurt, plain
1 tsp garlic, minced
1/2 cup lemon juice, fresh
2 tsp cumin, ground
1/4 tsp saffron powder or 1-1/2 tsp turmeric
1-1/4 tsp salt
1-1/2 tsp cinnamon
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 cup mint, fresh, minced
5-1/2 lbs lamb, boneless loin, cubed
2-1/2 cups California Ripe Olives, whole, pitted
24 tomatoes, plum, large, quartered
1-1/2 qts zucchini, 1/2" slices

Method

Combine yogurt, garlic, lemon juice and seasonings. Reserve half; refrigerate for later use.

Marinate meat in remaining yogurt mixture 2 to 8 hours.

Remove meat from marinade; discard marinade. Thread meat and remaining ingredients on skewers. Grill over medium hot coals 10 minutes, turning once. Serve with refrigerated yogurt mixture over a bed of rice.
