Vanilla Bean Sauce

Vanilla Bean Sauce

Ingredients
1/2 qt milk
1/2 qt cream
12 pasteurized frozen egg yolks
1 scraped vanilla bean
6 oz sugar

Method
Combine the milk, cream and vanilla bean, bring this mixture to a boil.
 
In a separate bowl mix the sugar and the egg yolks, and over hot water bath, beat until fluffy. Slowly add the hot cream mixture. Place in pot, stirring continuously.
 
Allow the mixture to thicken slightly over low heat. Strain sauce through a fine strainer and cool in an ice bath stirring gently.
 
Serve with fresh fruits or as a dessert sauce.
