Vegetable Sausage Soup

Ingredients

1/2 lb. light Italian pork sausage
1 can (11 oz.) sliced carrots, drained
1 can (15 oz.) white potatoes, drained and cubed
1 clove garlic, minced
2 cans (14-1/2 oz.) beef broth (fat removed)
1 can (15 oz.) garbanzo beans (chick peas), drained
1 (14-1/2 oz.) chunky tomatoes, pasta style, undrained
1-1/2 cups water
1/2 tsp. dried Italian seasoning
1 bay leaf
1 can (11 oz.) green beans, drained
Grated Parmesan cheese

Method

In large skillet, brown sausage until fully cooked and drain. In large saucepan, add sausage and remaining ingredients (except green beans and cheese), and simmer over medium heat for 30 minutes. Add green beans and ladle into individual bowls. Sprinkle lightly with Parmesan cheese.
