Method
Crumble cheese (about 4 cups); set aside. Sauté onion and next 4 ingredients in olive oil until onion is soft, about 5 minutes. Stir in beans and next 3 ingredients; simmer 15 minutes.
Mix cornmeal with 1/2 cup water and cayenne pepper; stir into chili with bell pepper. Simmer 15 minutes. Remove from heat; stir in cheese.
Per Order: Heat 1-1/2 cups chili; garnish with 2 lime wedges.
Yield: 12 servings.
