Vegetarian Chili with Panela

Ingredients
1 lb California Panela cheese
1 large chopped onion
8 cloves finely chopped garlic
2 tsp dried oregano
2 tsp ground cumin
1/4 tsp ground clove
2 Tbsp olive oil
3 qts cooked assorted beans
2 large grated carrots
2 large grated zucchini
2 cups vegetable, chicken stock or water
1/4 cup cornmeal
1/8 tsp cayenne pepper
1 large chopped red bell pepper
24 lime wedges

Method
Crumble cheese (about 4 cups); set aside. Sauté onion and next 4 ingredients in olive oil until onion is soft, about 5 minutes. Stir in beans and next 3 ingredients; simmer 15 minutes.
 
Mix cornmeal with 1/2 cup water and cayenne pepper; stir into chili with bell pepper. Simmer 15 minutes. Remove from heat; stir in cheese.
 
Per Order: Heat 1-1/2 cups chili; garnish with 2 lime wedges.
 
Yield: 12 servings.
