Vesuvio Potatoes
Simple yet sensational, this easy-to-prepare side dish features the crunchy goodness of Ranch Recipe Wedge Cuts coated with a delightful mixture of parmesan cheese and savory herbs.

Ingredients
6 lbs Lamb's Ranch Recipe Wedge Cuts
7 oz olive oil
1 Tbsp Greek dried crushed oregano
2 tsp granulated garlic
1 tsp black pepper
1 cup grated Parmesan cheese
1 tsp crushed dried basil

Method
Arrange Ranch Recipe Wedge Cuts in full steam table pan (20" x 12" x 4"). Toss with oil.
 
Combine oregano, garlic, pepper, cheese and basil. Sprinkle over potatoes.
 
Bake at 400 degrees F (convection oven) for 30 minutes or at 450 degrees F (conventional oven) for 37 minutes, or until golden brown.
 
Yield: 30 servings.
