Vodka Sauce

Vodka Sauce

Ingredients
2 Tbsp olive oil
2 oz chopped garlic
36 oz puréed tomatoes
1 cup heavy cream
1/2 tsp crushed red pepper
2 Tbsp vodka
1/4 cup fresh minced basil

Method
Sauté garlic in olive oil, add tomatoes and bring to a boil. Reduce heat to low and simmer for about 20 minutes.
 
Add heavy cream and hot pepper to tomato sauce and simmer for 5 more minutes. Add vodka and basil to sauce and simmer for 2 more minutes.
 
Yields: 1 quart.
