Warm Bleu Cheese and Flank Steak Potato Salad
Serve this satisfying salad as an entree item to please your patrons with the hearty combination of steak and potatoes, topped with creamy blue cheese crumbles.

Ingredients
8 lbs Lamb's Natural Wedge Cuts
1 qt sour cream
6 lbs flank steak, grilled to desired doneness, sliced
2 lbs crumbled blue cheese
1/2 cup fresh chopped chives
1/2 large fresh, diced red bell pepper

Method
Steam Wedge Cut potatoes until fork-tender.
 
To serve: Place 4 oz hot Wedge Cuts on serving plate. Cover with a layer of sour cream and top with 3 oz flank steak slices. Garnish with blue cheese, chives and red pepper.
 
Yield: 24 servings.
