White Sauce

White Sauce

Ingredients
2 oz butter
2 oz flour
1 qt warm whole milk
1 tsp salt
1 tsp white pepper

Method
Melt butter, gradually stir in flour to make a roux. Gradually add milk stirring constantly. Add salt and pepper, bring to a boil, reduce heat to low and simmer for 15 minutes. Strain through a china cap lined with cheese cloth.
 
Yields: approximately 1 quart.
