Zesty Coconut Cream Dressing
Give your salads excitement with this little diva of a dressing.

Ingredients
1/2 cup Coco Lopez Cream of Coconut
1/4 cup cider vinegar
7 oz pack Italian salad dressing mix
Method
In small jar with tight-fitting lid or bowl, combine ingredients; mix well. Chill to blend flavors. Stir before serving.
Serve with tossed green salads, fruit salads or with coleslaw.
Makes 3/4 cup.
