Southern Style Pumpkin and Pecan Bread

Southern Style Pumpkin and Pecan Bread
Pumpkin is one of those unique vegetables that because of its flavor and texture can fit into any recipe ranging from soups to desserts. A perfect compliment to Southern style dinners.

Ingredients
2 cups pumpkin
1 cup corn oil
4 eggs, beaten
2/3 cup water
3-1/3 cup flour
1 tsp sale
1 tsp nutmeg
1 tsp cinnamon
2 tsp baking soda
3 cups sugar
1/2 cup golden raisins
1/2 cup pecans

Method

Preheat oven to 350° F. Grease and flour two loaf pans. In a large mixing bowl, combine oil, eggs, water, and pumpkin. Using a wire whisk, whip to blend thoroughly. Sprinkle in flour and when well blended, add salt, nutmeg, cinnamon, baking soda and sugar. Fold in to incorporate the ingredients, then add the raisins and pecans. Pour the mixture into the loaf pans and bake for 1 hour.

 

MAKES: 2 loaves.
