Ingredients

1/2 cup olive oil 
9 lbs Alaska sole fillets, thawed if necessary
Tomato-Herb Compote 
1/2 cup parsley, chopped
3 cups Feta cheese, crumbled

Method
 For each serving: Heat 1 tsp oil in skillet over medium-high heat; add one sole fillet.  Cook for approximately 3 minutes or until fish is just cooked through, turning once.  Place on serving plate with 1/4 cup Tomato-Herb Compote and sprinkle with 1 tsp parsley and 2 Tbsp cheese.
