Crab on Filet Mignon

Crab on Filet Mignon

Serves: 8

Ingredients
8 Filet mignon
1 tsp vegetable oil
1 red pepper, chopped
2 garlic cloves, minced
1/2 cup almonds, ground
2 plum tomatoes, chopped
Juice of 1 lemon
7 oz crab meat
1/8 tsp cayenne pepper
1/4 tsp salt

Method
Sauté red pepper and garlic in oil, add almonds, tomatoes and lemon juice. Blend together until heated through. Process until coarsely puréed. Fold in luxury crab meat and seasonings. Serve over grilled filet mignon.
 
Yield: 8 servings.
