Restaurateur Introduces Customers to Local Rancher

Local Ranchers meet Blue Moon customers

When Charlie Olson partnered with Ameristar Meats, he didn’t just bring locally-sourced meat products to his Blue Moon Burgers; he decided to bring in the ranchers who’d raised the beef themselves.

Charlie hosted the second annual Rancher Day at his gourmet burger restaurant in West Seattle. Bryan and Deb Gotham of the Gotham Ranch came in from their home in Colville, Wash. to spend the day being ambassadors for the Cattle Company Beef brand.

For the Gothams, it’s a way of educating consumers about the rancher’s end of the beef industry. For Charlie, it’s an imperative piece of understanding and delivering what his customers want. Consumers report they want to know where their food comes from and the hands that helped make it. They want a return to food that is locally-sourced, healthy, and to support hard-working people just like themselves.

Greg Gearhart, FSA District Manager of Sales, believes diners in cities like Seattle are more likely to support this idea. “It seems like it was the early 2000s when people started thinking about the sustainability of their food,” said Greg.

One of the biggest questions Greg hears from consumer-based focus groups is, “Where do your products come from?” Events like Rancher Day help answer that question.

Blue Moon burger with onion ringsDuring the day, customers were asked (in between bites of the El Diablo and Impossible Burger) whether they cared where the food came from as long as it tasted good. Multiple customers agreed they were more likely to buy a locally-sourced product, even if it was more expensive. But why? 

“Because we’ve gotten so far removed from where our food comes from and now we’re trying to get back to that,” said one patron. “It’s much easier to know the farmer down the road than it is the businessman in his office one thousand miles away.”

Wade Triplett, FSA Vice President of Merchandising, voiced similar sentiments. “When Charlie’s customers order a meal, they aren’t just getting a hand-crafted burger hot of the grill, they’re getting the Gothams’ story as well,” he said.

The Gothams’ days start at four each morning. Deb is a teacher and Bryan works for the county. After their “real jobs,” they begin the process of feeding their cows; all 300 of them (a number that doesn’t include the calves). During the winter when the cows are in pasture, feeding takes about three hours. On the weekends, Bryan and Deb devote most of their time to the herd, checking on calves and their nursing mothers.

Twice a year, the Gothams hold a round-up, where the cows are brought down from the pastures and sent to the Colville National Forest where they graze in the early summer. Then again in the fall, the cows are herded back to the Gothams’ property in Republic, Wash. where they spend the winter months. The round-up is everything you’d imagine the old west was. Dogs bark at the heels of calves and cowboys on horses pressure the herd forward to better grazing. Deb cooks up thousand-calorie meals that dirty-faced, spur-heeled men quickly devour. It’s a collaborative effort that takes weeks of planning and days of riding. It wouldn’t be possible without the help of their friends and family.

But what does the Gothams’ story mean for the average customer looking for a good burger? Charlie believes the ranchers help bridge the gap between the consumer and the businessman. “When you meet someone who has had a hand in crafting a product, it changes the dynamic of that product,” he said. For Charlie, it isn’t just about the sales increase of using the high-quality meat the Gothams provide, but identifying with quality people and their product to raise awareness. 

“It’s a good reminder to our employees too,” said Charlie. “We’re not just buying meat from the lowest bidder, we’re buying quality.”
